Bruegger's Bagels' parent names former Einstein franchising exec chief development officer

Paul Carolan is the new chief development officer for Le Duff America, Inc. The North American bakery arm of Groupe Le Duff named Carolan to the post as it prepares for expansion of its bakery concepts, and shortly after naming a new president for its Brioche Doree and Michel's Bakery concepts, Jeff Drake.

Carolan's experience spans 30 years in the restaurant industry. He has held significant leadership roles with leading foodservice companies, such as HMSHost Marriott, Aramark, and Einstein Noah Restaurant Group. At Sun Capital Partners, where was vice president of development and worked most recently, he led franchise development efforts for more than 1,900 restaurants.

His franchise development strategy role supported brands like Bar Louie, Boston Market, Garden Fresh and Fazoli’s. At Einstein, his role not only oversaw franchise development, but also finance, marketing, quality assurance, training and the design of the restaurants.
